We randomly came across this rainbow striped candy last week.  It just seemed like it would make a perfect little rainbow on top of a mini cupcake!  My 12 year old daughter is good in the kitchen and took on the project.

Candy is a fun, quick way to dress up cakes, cupcakes and cookies.  The candy we used was Air Head Xtremes Rainbow Berry Sour Candy.

Of course rainbows and gold coins go together on St. Patrick’s Day!

To top it off, we made use of those gold cupcake liners we had left over from our mini banner!  It always feels good to get 2 projects out of something you buy!

Even though St. Patrick’s Day is past, rainbows can be fun for kids year round!
